Since northern Vietnam has colder weather compared to the Central and the South, so ways of using spices and ingredients are also different. All of these historical and geographical features affect and make the Northern cuisine distinctive.Apart from Phở – the most famous Vietnamese dish, the North is also famous for other traditional dishes, such as Bún Chả (vermicelli with grilled pork), Chả Cá Hà Nội (turmeric fish with dill and noodles)

'Bun Cha' is a famous Hanoi dish. It is well known for when Anthony Bourdain shared this dish over dinner with Obama. After Pho, Bun Cha is one of Hanoi's famous dishes

Escargot stewed with green banana and tofu / Ôc om chuoi đâu
Fully cooked green bananas are tender in contrast with the crunchy tofu, fatty pork belly, and slightly chewy snails. This dish is packed with so many flavors and textures that will take your tastebuds for a wild ride.

This succulent pork leg is roasted then chopped into bite-sized pieces and marinated with pounded galangal, minced lemongrass, fermented rice and Vietnamese “mắm tôm” shrimp paste

Fermented 'shrimp paste' & crispy tofu /Bún đâu thit luôc
Golden brown and crispy tofu served with vermicelli and fermented shrimp paste (măm tôm) dipping sauce. Mam Tom is not for a faint of heart. It has a strong and pungent smell.
